It is one of the main ingredients of bouquet garni combined with bay leaf and parsley. It stimulates the appetite and aids digestion of fatty food. Suits food cooked slowly in wine, particularly meat, shellfish, poultry and game. It imparts a pungent flavor to soups, stews and stuffings. Use cautiously when picked fresh, as it is extra pungent. A keynote flavor in Jamaican cuisine. SHADE - TENDER PERENNIAL - ZONE 11+ TOOTHACHE PLANT Spilanthes oleracea (Australian cress, Spilanthes) Leaves have a mild anesthetizing effect and are useful for toothaches. Also used as an antibiotic against candida. The fresh leaves are edible and are eaten like cress. BEST IN SOME SHADE - ANNUAL VALERIAN Valeriana officinalis Valerian roots have excellent sedative action that is non-addictive. Widely used to allay pain, nervous unrest, migraine, and insomnia. Valerian roots harvested in the second or third year can be made into tinctures, teas, or extracts.
