THYME
Thymus
Aromatic low growing bush or creeping herbs, ideal for rockeries, borders, or along pathways. Pretty pink or purple blossoms are a favorite of honeybees. Thyme is one of the most useful culinary seasonings . It is one of the main ingredients of bouquet garni combined with bay leaf and parsley. It stimulates the appetite and aids digestion of fatty food. Suits food cooked slowly in wine, particularly meat, shellfish, poultry and game. It imparts a pungent flavor to soups, stews and stuffings. Use cautiously when picked fresh, as it is extra pungent.
   CARAWAY THYME Thymus herba-barona Delightful sweet caraway scent and flavor. Ideal in rock gardens.
   ENGLISH THYME Thymus vulgaris Most popular variety. Broad dark green leaves. Robust upright growth habit.
   FRENCH THYME Thymus vulgaris (Summer Thyme) Narrow leaves, distinctly greyer and sweeter than English. Preferred by the French. Needs some winter protection.
   LAVENDER THYME Thymus thracicus Strong lavender scent. Creeper forming dense furry mats; lavender-purple flowers. Very attractive.
   LEMON THYME Thymus x citriodorus Small upright bushy habit; dark green leaves. Delightful citrus flavor for fish, chicken, meat, salads and tea.
   MOTHER OF THYME (WILD THYME) Thymus pulegioides (T. serpyllum) Low creeper, well suited as ground cover. Perfumes the air when trodden upon. Helps to clear mucous congestion. Used in cooking.
   ORANGE THYME Thymus fragrantissimus True orange-scented thyme. Try it fresh or dried in soups, sauces, stews, on roasts, fish and
   SILVER THYME Thymus vulgaris 'Argenteus' Same flavor and fragrance as English Thyme. Lovely accent plant. For hanging baskets and as garden edging
   WOOLLY THYME Thymus pseudolanuginosus Lovely low carpets of grey, woolly leaves and pale pink flowers. Lacking scent or flavor, its virtues are mainly visual and tactile. Superb contrast plant for greener herbs.

BROADLEAF THYME Coleus amboinicus Quite unlike other thymes, this favorite of tropical America has large fleshy leaves. A keynote flavor in Jamaican cuisine, this thyme is a TENDER PERENNIAL.
