


Chives
Allium schoenoprasum
Essential kitchen herb! Chives are the smallest members of the onion family. Chopped leaves offer great improvement to salads, soups, vegetables, omelets, and cheese dishes. Besides using the leaves, try the pretty purple flowers, separated into florets, in salads for color and flavor. This herb grows well in pots or on a windowsill.
Chives are a hardy perennial with a height of 12 inches and a spread of about 18 inches. Purple globular flowers appear in early summer. These flowers are eatable, but be prepared for a strong, peppery zing. The leaves are green and cylindrical.
